Weight Watchers 0 Point Cabbage Soup

This hearty soup is a complete winner in my books because it is a whooping zero (0) Weight Watchers points! The best part about this recipe is that you can customize the soup with your favourite ingredients. Just make sure you count the points correctly if you are adding something other than veggies. I usually add 3-4 ounces of chicken to the soup for a total of 3-4 Weight Watchers points per serving. You can also pair the soup with a nice sandwich on the side.

As I write this post, I am eating it with a delicious tuna sandwich–a perfect pairing for such a yummy healthy soup. It takes me 20 minutes from start to finish to make this soup. Completely worth the effort.

Ingredients

  • 3.5 cups of non-fat, low-sodium beef broth
  • 1 tsp of oil
  • 2 garlic cloves (minced)
  • 1 tbsp tomato paste
  • 3 cups cabbage (chopped)
  • 1/2 medium onion (diced)
  • 3/4 cup carrots (chopped)
  • 3/4 cup green beans
  • 3/4 cup zucchini (sliced)
  • Spices (basil, thyme, oregano, Mrs. Dash Extra Spicy Seasoning*)

*Mrs. Dash spices are AMAZING because they are salt-free.

Instructions

  1. Add oil to a large pot and saute the onions and garlic for 3- 5 minutes.
  2. Add broth, tomato paste, cabbage, green beans, carrots and spices to taste.
  3. Simmer for a about 5-10 minutes until all vegetables are tender.
  4. Add the zucchini and simmer for another 5 minutes.

You will need a ladel and a big enough pot to hold 8 servings. Every household kitchen should have a large pot for preparing soups and stews.

    This is my favorite dish. You can also add some protein from tofu to chicken to shrimp, The possibilities are endless with this soup.

    I made it tonight… added some fresh mushrooms. When I dished up a serving, I seasoned with it Sriracha hot sauce and added 2 Tablespoons of Greek Yogurt. This is so delicious! I think I’ll season it a little differently each time I eat a bowl of it. There are so many possibilities!

      @Roberta We usually try different seasonings before serving. It becomes a different dish each time we make and serve it.

      I also do mine in a crock pot and use diced tomatoes , part tomato juice and part chicken broth.

    I make this soup, put in large bowl and add seasonings extra, i make it with mexican taste. By adding pack of taco bell sauce! It great!

            I just made this and I am completely in LOVE already. It is SO easy to customize! I added some plain, nonfat greek yogurt with some sriracha as someone suggested and some fresh cilantro on top. mmmm! Going back for seconds! 🙂

    I have made this twice in 2 weeks…I just love it. I didn’t use any oil…just threw everything in a pot and simmered it. Zuchini is expensive right now so I left that out but added some cauliflower and broccoli this last time. Very yummy!!!

      I am not sure of the exact amount as it changes each time I make it. I would say approximately 5-6 cups.

      Yes, for one serving this is 0 points. If you eat the entire pot in one sitting then yes the point value would be higher. It’s only 0.5 a tsp for the entire pot.
