Weight Watchers 2.5 Points Greek Pasta Salad

So here is a really fantastic pasta salad recipe. To add a twist … we made it GREEK!

While creating this recipe and adding up the Weight Watchers point values in my head, I was getting a little bit worried that the points would be higher than I wanted. HOWEVER, to my shock and amazement, this delicious pasta salad is only 2.5 points (original points system) for a cup. Yes, that is right … a full serving cup for only 2.5 points.

I hope you try this recipe and enjoy this healthy, low-calorie pasta salad as much as my hubby and I did. Let me know what you think of this recipe or how you tweaked it in the comments below. Happy eats!

Ingredients

16 ounces / 450 grams rotini (uncooked)
3/4 English cucumber (diced)
2-1/2 cups grape tomatoes (halved)
1 red bell pepper (diced)
1/2 cup black pitted olives (sliced)
1/2 cup feta cheese (cubed)
1/2 cup red onion (diced)
3/4 cup light Greek vinaigrette dressing

Instructions

  1. Cook the pasta el dente following the cooking instructions on the package.
  2. Remove from heat immediately, drain, and rinse the pasta under cold water to stop the pasta from cooking some more.
  3. Combine all ingredients in a large metal mixing bowl and toss.
  4. Transfer to a round Pyrex dish and refrigerate at least 2 hours before serving.

My Kitchen Tools

A good mixing bowl is so convenient for many big batch recipes in my blog, such as pasta salads. When you use a large mixing bowl, you do not have to be too careful about your ingredients falling out of the bowl as you try to get a nice and even mix of all your ingredients.
