Low Fat Cornmeal Muffins

When I was younger I used to make Cornmeal Muffins for the family and like all muffins they are super high in points some reaching as high as 6 points per muffin. I really wanted to find a good, easy, quick Cornmeal Muffin recipe and then tweak it to lower the fat and calorie content. Instead of oil I used apple sauce and instead of one egg I used two egg whites. These muffins came out super moist and yummy. Each muffins contains approximately 2 weight watcher points. Serve these up the next time you have stew or chilli or just for fun as an afternoon treat.

Ingredients:
  • 1 cup flour
  • 1 cup cornmeal
  • 1/3 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/3 cup Apple Sauce (room temperature)
  • 2 Egg Whites
Directions:
  1. Stir dry ingredients together.
  2. Add the wet ingredients and beat just until all ingredients are blended.
  3. Fill well-greased muffin cups 2/3 full ( I used a square muffin pan)
  4. Bake at 400º for 20 minutes. Immediately run a small knife around each muffin and pull out of muffin cup onto a cooling rack. Best served warm from the oven. Yields 12 Cornmeal Muffins.

Chai Martini

Here’s a fantastic Martini recipe that is sure to impress your guests the Chai Martini. My hubby loves his Chai Lattes and in the fridge we have some Chai mix (image below). I thought why not spice up experimental drink night. This martini is CRAZY amazing. It has a nice flavour, nice spice, smooth and creamy. DELICIOUS!!. To make it a little more NAUGHTY replace the 1oz Milk with 1oz of Hot Sex. This recipe makes one martini so please double it if your serving 2.

Ingredients:
  • 1oz Vanilla Vodka
  • 1oz Milk or replace with 1oz of Hot Sex for a sweeter ginger flavour
  • 1oz Chai Mix (purchase at any grocery store or Starbucks)
  • A dash of Pumpkin Pie Spice
Directions:
  1. Add all ingredients to a martini shaker with ice and shake.
  2. Pour into a martini glass sprinkle with Pumpkin Pie spice and Enjoy.
