Pumpkin Pie Frozen Yogurt

Happy Halloween my friendly food followers. Pumpkins and Halloween go hand in hans so why not try serving up some Pumpkin Frozen Yogurt this season. After experimenting with some low fat pumpkin drink recipes I had some left over pumpkin puree. I thought to myself what can I make with this left over pumpkin and it hit me, frozen yogurt. Here you have a delicious low fat pumpkin pie in the form of a frozen treat. Super creamy, yummy and not overly sweet. 1/2 cup is 2 weight watchers points. Top with low fat  whipped cream and sprinkle a little extra pie spice and dig in.

Ingredients:
  • 1 cup Canned Pumpkin Puree
  • 1 cup Non- Fat Greek Yogurt
  • 3 tbls Honey
  • 1 tsp Pumpkin Pie spice OR (1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/4 teaspoon allspice)
Directions:
  1. Place all ingredients in a medium-sized bowl and stir until combined.
  2. Place mixture in an ice cream maker and let churn for 20 minutes, or until cold and creamy. No ice cream maker? No problem just place in the freezer for 2 to 3 hours and stir every 30 minutes.
  3. Serve immediately or place in the freezer for another hour if a firmer texture is desired.

NOTE: If you don’t have an ice cream maker, just place yogurt in the freezer for 2 – 3 hours  stirring every 30 mins.

Low Fat Banana Muffins

I love all things banana especially Banana Muffins and Bread. These muffins are low fat and delicious. Instead of using milk and butter to make these muffins moist the recipe calls for apple sauce and mashed up banana’s.  I have tried many recipes with applesauce and they usually turn out super dense, but these are light, moist and yummy. 3 mini muffins equals 1 Weight Watcher point. If your using a normal 12 cup muffin tin then one of those muffins would be 1 Weight Watcher point.

Ingredients:
  • 1 cup of Flour
  • 1 tbsp of Baking Powder
  • 1/2 tsp of Baking Soda
  • 1/8 tsp of Kosher Salt
  • 1 cup of mashed Banana’s
  • 1/4 cup of Applesauce
  • 1/4 cup Sugar
  • 1 Egg
  • 1/2 tsp Vanilla Extract
Directions:
  1. Preheat oven to 350 degrees F
  2. Grab two bowls and in one bowl mix together Flour, Salt, Baking Power, Baking Soda.
  3. In the second bowl beat together Egg, Banana, Sugar, Applesauce and Vanilla.
  4. Stir the wet ingredients into the bowl with the dry ingredients and stir until just combined.
  5. Pour mixture into the muffins tins and bake for 18-20 mins.
  6. Cool and Serve.

Low Fat Chocolate Cake

OK.. WOW… I was really hesitant to try this recipe because I thought the cake would be super dense, but holy cow was I wrong. Just two simple ingredients are all you need to make a low fat deliciously fluffy chocolate cake. You can you either bake in large or small muffin pans. If you make mini muffins 3 will equal 5 WW points. If you make 12 large muffins 1 will be 5 WW points. This recipe was modified from a Hungry Girl recipe. HG’s recipe calls for Pumpkin Puree and I used Pumpkin Pie filling for a little extra spice. I think what caught me off guard was these actually rose like a cake and are so super moist. Seriously do not wait as long as I did, make these tonight for dessert the family will love it.

Ingredients:
  • 1 box Devils Food cake mix
  • 1 14 ounce can of Pumpkin Pie filling
Directions:
  1. Heat oven to 350 degrees.
  2. Mix Pumpkin Pie filling with Devils food cake (batter will be thick DO NOT add anything else it will ruin the batter).
  3. Scoop into greased muffin pans and bake for 20-25 mins.
  4. Remove from oven and enjoy.

 

Honey Dew Sorbet

Homemade Honey Dew Sorbet, perfect for those hot summer nights. There are only 3 ingredients in this recipe so it’s super easy to make and the family will love it. You can also swap out the fruit to make other variations such as watermelon and pear (the pear goes well with lemon juice). 1/2 cup serving is 2 weight watcher points. In the second image you’ll notice I have the sorbet split into Ball Plastic Freezer Jars, I found these at Save-on-Foods. These are plastic with a twist top and are made for the freezer so they are perfect for this recipe. If you don’t have this type of container, just place in any type of freezer friendly container.

Ingredients:
  • 2 cups of Honey Dew cut into chunks
  • 2 tablespoons of Lime Juice
  • 2 tablespoons of sugar (if you like it sweeter add more sugar)
Directions:
  1. Add all three ingredients in a blender
  2. Blend until smooth
  3. (Optional Step) Add fruit mixture to an ice cream machine and churn for 15 mins
  4. If you don’t have an an ice cream machine just add the juice to your individual serving containers or other freezer friendly container and freeze over night.
  5. When ready to eat let the container sit on the counter for a few mins to soften, open and enjoy.

Deconstructed Strawberry Cheesecake

I was in the mood to make a cheesecake for my girl friends birthday, but I wanted to create something amazing that she wouldn’t forget. So I thought why not make a deconstructed strawberry cheesecake. This was actually a lot easier to make then it looks.

Ingredients:
  • 2 cups crushed graham crackers
  • 1 tbsp sugar
  • 4 tbsp low fat margerine, melted
  • 1 cup fresh strawberries
  • 1 tbsp sugar
  • 2 tsp lemon juice
  • 1/4 cup tbls finely chopped dark chocolate
  • 1 package of low fat cream cheese, softened
  • 4 cups of low fat cool whip (3 used with the cream cheese and 1 cup used for the chocolate whipped topping)
  • Chocolate dessert cups
Directions for heart cookies and crumbs:
  1. Preheat oven to 160°C (325°F).
  2. Lightly grease a cookie baking sheet (I used my round stone as I don’t need to grease it).
  3. Mix crushed biscuits and 1 tbsp sugar together in a medium bowl.
  4. Add butter and stir until well combined.
  5. Using your hands, spread mixture on the cookie pan and press down as hard as you can.
  6. Bake until crust is set and golden in places, 15–20 minutes.
  7. Set crust aside until cool.
  8. Once cooled use a small heart shape cookie cutter to cut out cookies and set them aside.
  9. Place the left over crumbs in a bowl. These will be used in the chocolate cup creation.
Directions for strawberry topping:
  1. Place chopped strawberries, lemon juice and 1 tbsp sugar in a small saucepan and cook on medium-low heat, stirring until the sugar dissolves.
  2.  Stir over heat until mixture starts to thicken, then set aside to cool.
Directions for cheese cake filling:
  1. Combined the cream cheese and cool whip with an electric mixer.
  2. Add the chopped up chocolate pieces and stir.
  3. Place in fridge to cool
Directions to chocolate whipped topping:
  • Mix 1 cup of cool whip with a low fat chocolate pudding cup. Set in fridge to keep cool.
Directions to assemble your masterpiece:
  1. Fill the chocolate dessert cup about 1/4 to 1/2 full with the cream cheese mixture.
  2. Place a layer of the loose gram cracker crumbs on top of the cream cheese.
  3. Add about a tbls spoon of the strawberry mixture on top of the gram crumbs.
  4. Finally top the strawberries with the chocolate whipped topping and sprinkle with some shaved chocolate.
  5. Next to the cup whip some of the chocolate whipped cream on the place.
  6. slice a large fresh strawberry, fan it out and place on top of the chocolate whip cream.
  7. Place about a table spoon of the cream cheese mixture in front of the fanned strawberry.
  8. Place heart cookie next to the cream cheese mixture to help prop it up.
  9. Sprinkle with shaved chocolate, serve and enjoy.

Peanut Butter Puff Treats

If your like me and LOVE rice krispy treats here’s a great healthy, low fat alternative. I slightly modified the recipe from hungry girl and added some peanut butter and a few more marshmallows. One square is 1 weight watchers point, which means yes a treat you can finally pig out on and NOT feel guilty. Speaking of which I think my pan is now cooled, ready to be cut, photographed and devoured. Until our next encounter; Enjoy :)

Ingredients:
  • 5 cups of puff wheat
  • 2 cups of fiber one (love this stuff)
  • 3.5 cups of mini marshmallows
  • 2 tablespoons of low fat becel margarine (I use the blue tub one)
  • 1 tablespoon of peanut butter (regular or low fat there is no point difference)
Directions:
  1. Mix the two cereals in a large bowl. Set aside.
  2. Melt butter and peanut butter in a large pot.
  3. Add mini marshmallows and melt those down.
  4. Remove pot from the heat and add the cereal and stir until fully covered.
  5. Pour in a 9 x12 lightly greased pan.
  6. Once they are cool cut into 25 squares.

3 Musketeer Chocolate Bars – Homemade

OMG!! A guilt free chocolate bar recipe for all the chocolate lovers out there. I found this one on the net and decided to give it a go. I am super happy I did. This is an amazing recipe and so super easy to make. All you need are three ingredients, chocolate chips, cool whip and chocolate wafers. It did not specify if the cool whip was low fat or not so I used the low fat tub; also to note 8oz = 3 cups of cool whip. OH and did I mention that one of these is 1 weight watcher point. Happy days are here again, I hope you enjoy these as much as we did.

Valentine’s Day Buttons

Here’s a treat anyone would love … sweet, salty, crunchy, and full of chocolate. Best of all it’s super easy to make and all you need are:

  • Square pretzels which you will find at superstore, the blue menu brand.
  • Hershey’s Kisses
  • Smarties. Mine are red and pink because it was valentine’s days.

Directions:

Preheat your oven to 250 degrees. Place pretzels on a cookie sheet that’s been lined with wax paper and place the Hershey’s kisses on top of the pretzels. Place in the oven for about 5-6 mins. The kisses will keep their shape. Take out of the oven, place a smartie on the middle of the kiss and press down. Place in the fridge for a few mins to chill and enjoy.

Low Fat Chocolate Pudding

There are days where I will crave chocolate. Instead of running to the nearest corner store to buy a chocolate bar I run to my pantry and grab a low fat chocolate pudding cup. I add some fat free cool whip (which is amazing), top it with a few tiny chocolate chips, a few shreds of coconut and add a low fat graham cracker. The total damage for this snack is 3 ww points. Compared to the average chocolate bar of 5 to 6 points this is definitely a heavenly chocolate treat. I also sometimes make low fat sugar free chocolate pudding with low fat milk (half a cup is 1 point). I hope you enjoy this treat as much as I do.

Twisted Yogurt Creations

When it comes to sweet treats while out an about or simply just because, I like to stop at Twisted Yogurt. This is my absolutely favourite place to visit. All their yogurt is fat free except for the chocolate; it’s low fat. You select your cup size and flavour. Once your yogurt is in the cup, head on over to the treat bar where they have a huge selection of goodies to top off your frozen treat. In the cup above Mel added dried cranberries, fresh strawberries and these little balls of greatness. I don’t know what they are called but when you bit into them you get a crazy burst of awesome flavor. When we go we get one cup and share it. One, sharing makes is more like a cute high school date and two it saves on calories.
