So here is a really fantastic pasta salad recipe. To add a twist … we made it GREEK!
While creating this recipe and adding up the Weight Watchers point values in my head, I was getting a little bit worried that the points would be higher than I wanted. HOWEVER, to my shock and amazement, this delicious pasta salad is only 2.5 points (original points system) for a cup. Yes, that is right … a full serving cup for only 2.5 points.

Ingredients
16 ounces / 450 grams rotini (uncooked)
3/4 English cucumber (diced)
2-1/2 cups grape tomatoes (halved)
1 red bell pepper (diced)
1/2 cup black pitted olives (sliced)
1/2 cup feta cheese (cubed)
1/2 cup red onion (diced)
3/4 cup light Greek vinaigrette dressing
Instructions
- Cook the pasta el dente following the cooking instructions on the package.
- Remove from heat immediately, drain, and rinse the pasta under cold water to stop the pasta from cooking some more.
- Combine all ingredients in a large metal mixing bowl and toss.
- Transfer to a round Pyrex dish and refrigerate at least 2 hours before serving.
